Cherry Nut Bread
2 cup Unbleached Flour
1 cup Sugar PLUS 2 Tablespoons Sugar
1 1/2 teaspoon Baking Powder
1/4 cup Shortening
1 large Egg
1/2 cup Orange Juice
1 tablespoon Grated Orange Peel
2 tablespoon Cherry Juice -OR- Warm Water
1 cup Tart Cherries well drained and coarsely chopped
1/2 cup Nuts chopped

Sift the flour, sugar and baking powder together and cut in the shortening until the
mixture looks like coarse crumbs. Stir in the egg, Orange juice, orange peel and cherry
juice (or water) blending only until well moistened. Fold in the cherries and nuts. Pour
into the prepared pans of choice and bake at 350 for 25-30 minutes or until done.
