Chocolate Cake
(Diabetic)
1 teaspoon baking powder
1 box chocolate pudding
2 cup all purpose flour
3 packets sweet n low
5 eggs
1 teaspoon vanilla extract
2 tablespoon cornstarch

Preheat oven 400 degrees. Grease and line the bottom of a jelly roll pan with wax
paper. Beat eggs in a large bowl with mixer until fluffy. Add sweet n low and vanilla over
eggs, continue beating for 2 minutes. Sift flour, cornstarch, and baking powder together.
Add flour to mixture mixing well.
Bake 400 degrees for 10-12 minutes or until cake spring back.
Arrange a towel on work surface and cover with foil, Loosen edges
of cake on to foil. Using the towel as a guide roll the cake until cool into jelly roll
shape. when completely cool put filling in center and roll back up top with sugar free
cocoa powder.
