Pound Cake Petit Fours

12 oz of unsalted butter, at room temp
6 large eggs
1 1/2 cups of sugar
1 1/2 cups of flour, sifted
1/2 teaspoon pure almond extract
1 teaspoon pure vanilla extract

 

 

Heat oven to 350 degrees. Beat butter in mixer until fluffy, adding sugar gradually.
Add one egg at a time, beating each before adding another. Fold in flour, vanilla,
almond extracts; mix until well incorporated. Spread mixture into a greased and
parchment line 11"X18" jelly roll pan and bake 18-20 minutes or until the top is golden brown. Let cool in pan. Use what ever Jam or Jelly you want for the center and spread a thin layer on one half of the pound cake, then take your shaped cutter and cut one cake piece out of the half with out the spread and
then cut another from the side that is with spread. you now have your petit four already with its center then frost with a pour icing or thinned fondant.
Makes enough for about 50 1-1 1/2 inch diameter circle cut petit fours
