Silver White

2 1/4 Cups cake flour (or 2 Cups flour and 1/4 Cup cornstarch)
1 1/2 Cups sugar
3 1/2 teaspoon baking powder
1 teaspoon salt
1/2 Cup soft shortening
1 Cup milk
1 teaspoon flavoring
4 egg whites (1/2 to 2/3 cup), beaten

 

 


Heat oven to 350°F. Grease and flour two layer pans, 8 or 9 x 1 1/2" or an oblong pan, 13x9 1/2x2". Measure flour by dip-level-pour method or by sifting. Blend flour, sugar, baking powder and salt. Add shortening, 2/3 C. of milk and flavoring. Beat 2 minutes, medium speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl constantly. Add rest of milk and egg whites. Beat 2 more minutes, scraping bowl frequently. Pour into pan(s). Bake layers 30-35 minutes, oblong 35-40 minutes. Cool. Elegant with lemon filling, a fluffy icing and flaked coconut.
