Poppy Seed Lemon

1 box lemon cake mix (standard size, about 18 ounces)
1 box lemon pudding mix (4-serving size, regular or instant, not sugar free)
4 large eggs
1/2 cup oil
amount of water called for on cake mix box
1 to 2 tablespoons of poppy seeds
 

 

 
Mix at lowest speed briefly until all ingredients are mixed, Scrape sides of bowl with spatula, then mix as directed on cake mix package (usually 2 minutes).

Pour into prepared pan. Bake as directed on cake mix box or according to the pan you are using.


This is a favorite among my family and friends. I have made it as layers, as sheet cake, in shaped novelty pans, and in standup pans. It is fairly sturdy but not objectionably dense, in my opinion. I usually use lemon filling with it, and buttercream frosting flavored with 2 teaspoons of lemon extract per 2 pounds of powdered sugar. That's a bit more lemon than I care for all at once, but it is what is requested most often.
