Pineapple Upside
Down
If you would like a
different look for an upside down cake, I use this 2 layer cake and it is
awesome!
1/4 cup butter
1/2 cup brown sugar
1/2 cup coconut
1 can sliced pineapple
1 can crushed pineapple
1 yellow cake mix

Preheat oven to 350.
Drain and reserve juice from both cans of pineapple.
Divide butter in 2 9-inch round cake pans. Melt butter and
coat bottoms.
Divide brown sugar and sprinkle in pans.
In one pan sprinkle coconut and layer pineapple rings.
Spread crushed pineapple into other pan.
Use reserved juice instead of water for cake mix.
Divide mix evenly in both pans.
Bake 350 40-50 minutes.
**remember pan with the coconut and pineapple rings.
Let cool 30 minutes.
Turn out bottom layer with crushed pineapple.
Turn out top layer with rings and serve!
