Cheesecake Bites
1 pound cream cheese (softened)
2 Tablespoon flour
1 cup sour cream
4 egg yolks
4 egg whites
1/3 cup sugar
1/2 teaspoon vanilla
1/3 teaspoon lemon oil

Preheat oven to 350 degrees. Line 10x10 square pan with parchment paper. Beat (don't over
beat) cream cheese with sour cream, egg yolks and flour, vanilla, lemon oil until smooth.
Beat egg whites with sugar until soft peaks form. Fold into cheese mixture. Spoon filling
into prepared pan (lined with parchment paper). Put cheese in freezer. when hardened cut
into 1x1 squares. Leave squares in freezer, taking out 5-6 at a time and dipping in cocoa
lite milk chocolate, allowing to harden room temperature, then putting back in freezer in
a cake box which has been covered with 2 layers plastic wrap.
Allow about 15 minutes for the cheesecake to thaw before eating.
