Almond Cookies
Diabetic
1/4 cup + 2 Tablespoons reduced calorie
margarine
1/4 cup sweet one
1 egg yolk
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
1/4 teaspoon lemon extract
1 cup all purpose flour
1/2 teaspoon baking Soda
1/8 teaspoon Salt

Beat margarine at medium speed until creamy, gradually add sweet one, beating well.
Combine flour, baking powder, and salt; add to creamed mixture, beating well. Shape dough
into 1 inch balls; place 2 inches apart on nonstick cookie sheet. Press each with a fork
to flatten.
Bake at 300 degrees for 20 minutes or until edges begin to brown.
remove cookies to wire racks and cool completely.
Yields: 15 Cookies
