Oatmeal Raisin Cookies

1/2 cup reduced calorie margarine, softened
9 packages of sweet one granulated sugar
2 large eggs
2 teaspoon vanilla extract
1/2 cup all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick rolled oats
1/4 cup raisins

Preheat oven 350 degrees. In large bowl with mixer at medium speed beat margarine, sweet
one until well mixed. Beat in eggs and vanilla then flour, baking soda and salt . Stir in
rolled oats and raisins. Drop dough by rounded teaspoons onto ungreased cookie sheet,
pressing down slightly with back of spoon. Bake 6 -8 minutes or until golden brown around
the edges. Remove cookies to wire racks to cool completely.
Yields 2 dozen Cookies
