Cream Cheese
and
Pecan
Filling
1 8oz package of Cream Cheese
1/2 stick of margarine
1lb of powdered sugar
1 tsp or more of vanilla
about 1/2 cup of chopped pecans (You can also used walnuts)

Cream together cream cheese and margarine. Add powdered sugar about 1 cup at a time. Mix
well. Stir in vanilla and pecans.
NOTE Don't use the fat free cream cheese. It makes the
filling too thin. The reduced fat works well.
This is a good filling for red velvet, Italian cream, and carrot cakes. It is also
very good in yellow and chocolate cakes. It's differently going to be one of your
favorites, but then you must love cream cheese.
It is also good to frost with if you are not decorating the cake.
