Fluffy Frosting

(Diabetic)

2 tablespoon non fat dry milk
2 tablespoons water
1/2 teaspoon sweet n low (2 packages)
1 1/2 teaspoons lemon juice
1/2 teaspoon unflavored gelatin
1 teaspoon vanilla

 

 


Soften gelatin in 2 teaspoons of the water for 5 minutes and dissolve over hot water. Combine all remaining ingredients in small bowl of electric mixer, and beat on high speed for about 15 minutes, add dissolved gelatin very gradually, continuing to beat for another few minutes until frosting will stand in peaks. For best results use within 2 hours.
