Simple Soaking Syrup
 

1 Cup Granulated Sugar
2 Cups Water
2 Tablespoon Brandy (Felipe)
or Amarretto

What we do here in Puerto Rico is a butter cake made from scratch, then we soak it with a simple syrup with either Amaretto or Brandy, the most popular is brandy
 

 

In a saucepan dissolve the sugar with the water, bring to a boil, cover and remove from heat, let the syrup cool to room temperature. Add the 2-tablespoon of brandy or amaretto.
May substitute the brandy for a lemon peel, almond or vanilla flavoring, pineapple juice (7 ounces)
When you are ready to soak the cake (I suggest you soak the cake 2 hours before starting to decorate the cake) Pour the syrup over the cake while is still inside the cake pan, this way you don't have a mess of syrup. For a #7 I suggest you use just half of the syrup.
