Gumpaste Hypericum Berries
Materials/equipment
Gum paste Vegetable shortening Edible glue plus brush Celpad Rolling out board/ rolling pin Pliers Bone tool Florist¢s tape (green) Florist¢s scissors Pliers Tweezers Dusting brushes 26g covered wires (white) Petal dusts Confectioners glaze (1/3 strength) Small calyx cutter or stephanotis cutter
Hook the end of a piece of 26g wire. Roll a small piece of gum paste into a ball, then in to a cone. Dip the hooked wire into the edible glue and insert into the broad end of the cone. Use index finger/thumb and round off the base of the cone. Use a pair of tweezers and pinch the top of the cone (tiny blimp). Leave to dry (24 hours). Tape the wire with green florist¢s tape Dust the base of the berry with lime colored petal dust. Dust the berry (from the top down) with orange petal dust. Dust the berry (from the top down) covering most of the orange petal dust with red petal dust. Catch the tip of the berry with burgundy petal dust Pass the berry through the steam from a kettle (to set the petal dusts ie. stops the dust marking your fingers/cakes). Leave the berry to dry. Dip the berry in 1/3 strength confections glaze (to create a permanent sheen). Leave to dry. Roll out a piece of green gum paste. Cut out the calyxes for the berries. Transfer a calyx to the celpad. Use a bone tool and broaden three of the sepals on the calyx. Paint a spot of edible glue at the base of the berry and attach the calyx. Leave the calyx to dry. Dust the tips of the calyx with green petal dust.
N.B. For best effect Hypericum berries should always be taped into a bunch/stem before adding to a floral spray.
