Viva paper towels is what your going to use to smooth with.
If you would like to have designs in your frosting you can use a paper towel
that has prints in the towel and not smooth like the Viva is.
Smooth your cake like normal with an icing spatula
Smooth the sides with your icing spatula
Now you can see that the frosting is covering the cake.
You want to let the frosting crust a few minutes before you start to smooth
the cake.
Your going to use a fondant smoother to help you smooth on
the paper towel.
You can use your hand to smooth with unless you have hot
hands then you make indents in to the frosting with your fingers that is why I
have to use the fondant smoother my hands are too hot..
Smooth your sides first
You can see how the side is smooth
What you will do is lay the paper towel on the cake if the
cake is a larger cake your going to move it just lift it up and place it down.
Watch your middles that you don't get the edge of the paper towel you will
leave a mark in the frosting down the center of your cake. If this
happens just place the paper towel where the problem is and smooth there
again.. If there is an area you don't like once you have smoothed the whole
cake you can go back over that area.
